    After the Big Shopping, Menu Monday 3/1/201

    Heather says:

    We spent most of February eating from the pantry stash, cheating with take-out, and having sandwiches or breakfast for dinner. We made it through without too much damage, but I spent quite a while at the grocery store yesterday replenishing. March thankfully has a fairly clear calendar.

    This week I’ll be posting the March seasonal produce recipes, it’s time to get excited, we’re nearing the end of the winter produce!

    Here’s our menu for the week. What are you having this week? Is there anything you are excited to try?

    • Monday – Squishy-bean burritos – normal people refer to these as refried bean burritos-, Spanish rice, and fried green corn. The husband and I are also enjoying leftover albondigas, mexican meatball soup
    • Tuesday – Garlic soy chicken thighs, turnips au gratin, green beans
    • Wednesday – Short ribs, black-eyed peas, cauliflower cheese (this may be changed if I find a more interesting recipe for cauliflower I want to try), biscuits
    • Thursday – C.O.R.N. *
    • Friday – Cream of broccoli soup (I’m fixing the pictures on this post, hang tight, also since it’s for Friday I’ll be using vegetable stock), grilled cheese,
    • Saturday – Pizza Night – Taco pizza style, raw veggies on the side
    • Sunday - Roast chicken, more turnips, brussels sprouts, cornbread

    Items in bold are those I hope to add to the site and C.O.R.N. is simply an acronym for Clean Out Refrigerator Night.

    Try roasting your cauliflower w/ olive oil, salt & pepper. We like combining it w/ red potatoes cut into chunks — great flavor and texture combo!

    Sunday: Cantonese broiled tuna, rice pilaf, broccoli
    Monday: chicken verde, rice and beans
    Tuesday: turkey dinner with all the fixings
    Wednesday: bbq turkey pizza, salad
    Thursday: pot roast with taters, carrots, green beans
    Friday: noodle bake (cheesy+beefy stuff), broccoli, peaches
    Saturday: CORN

    The guys are having spicy burgers tonight-I found some pre-made seasoned beef patties at the store the other day and was looking for something I could make without much effort-not sure if they will get just burgers or if I'll make a gravy and mashed potatoes.The hubby would prefer the potatoes so I'll probably do that.I made myself a big pot of shredded turkey breast and brown rice today.I am also making a big pot of stock.The kitchen smells divine!

    Last night my husband and I had round steak, homemade mashed potatoes and gravy, and broccoli and salad. We were watching my grandson who just turned 1, and he just loved the gravy. Tonight, Tuesday we are having brutwurst, boiled potatoes, and red cabbage.
    Wednesday we will have bbq chicken, french fries, and on Thursday planning on having sandwiches with toss salad. Friday we will probably go out to our favorite mexican restaurant. Saturday throw some steaks on the grill with baked potatoes, and salad. Sunday it will depend what we are doing if I have time to cook. If not it will be C.O.R.N.

    I usually have the same routine for everyday of the week! Except on sundays..its my creative meal day !

    Everything sounds so good! I am just trying to use lose ends of meat before I buy more. I know that spring is coming, I dont care what the weather guy says!!! Has anyone given thought to spring recipes yet? Im not very creative with veggies. I am looking forward to eating lighter and maybe loose some weight.
