How to Roast Potatoes

Heather says: Roast potatoes are a simple side dish. This recipe comes together quickly and can easily be made while the main dish is cooked. In our home we use two different methods to roast potatoes.  Don’t forget that roast potatoes can serve as the basis for other one dish meals like homemade breakfast skillets. Depending …

Loaded Mashed Potatoes

Cooking for company is always Fearless Friday fodder. It’s hard to know exactly how someone else will perceive the dish. Throw in a second challenge and I was quite nervous about Wednesday’s dinner. You see, I was contacted by the folks at Carnation to test a recipe using their evaporated milk. I’ve always been a …

New England Clam Chowder

Heather says: Sometimes canned soup is good enough, but once you have had the real deal, it’s hard to go back. Try topping this basic clam chowder with a sprinkling of Old Bay Seasoning and a small handful of sliced green onions. This recipe is a good example of how simple a New England clam …

Baked Potato Soup Recipe

Ever since I worked at Bennigan’s, I have adored potato soup. I am fairly certain if it weren’t for snitched rolls and ramekins of baked potato soup, I would have wasted away in my late teens. I was sad to see the company recently declare bankruptcy, but take heart. The potato soup lives on. This …

Fisherman’s Pie

Heather says: I’m not going to lie. The original name for this classic turns my stomach. There is something about the idea of “fish pie” that brings up all sorts of unspeakable concoctions, rather than the simple and classic combination of fish, vegetables, and mashed potatoes. This makes for a simple meal of comforting flavors …

How to Store Potatoes

Dear Home Ec 101, I’ve always read that onions and potatoes should be stored well away from each other because if stored together they will cause each other to rot. But I frequently see kitchen renovation magazines that toot the joy of “basket drawers” stacked on top of each other, one filled with onions and …

Fish and Chips, Oven Fried Recipe

Heather says: While I will always prefer the beer battered and deep fried fish, this version is a close second and is much healthier. Nearly any white-fleshed fish will do: cod, walleye, or whiting for example. If you would like the chips done completely in the oven, follow the directions for these potato wedges, omitting …

Pseudo Shepherds Pie Recipe

Heather.jpgHeather says:

Traditional Shepherd’s pie contains lamb, gravy, and vegetables, covered with mashed potatoes. Its close cousin cottage pie contains beef. This version substitutes vegetable stock for the broth used to make the gravy and contains kidney beans to provide protein. As the mashed potatoes contain milk and are topped with cheese, this one dish* meal is suitable for lacto-ovo vegetarians. If you are opposed to alcohol, just use an additional 1/2 cup of stock.

*It ends up in one dish but takes several to cook.

Pseudo Shepherds Pie Ingredients

  • 2 tbsp olive oil
  • 1 medium diced onion
  • 2 cloves garlic – minced or pressed
  • 2 carrots, diced
  • 2 ribs of celery, chopped
  • 1 cup mushrooms – sliced
  • 1 cup vegetable stock
  • 1/2 cup red wine (or substitute an additional 1/2 cup of stock)
  • 1 tsp cornstarch
  • 2 cups or 1 can kidney beans (fully cooked)
  • 1/2 cup frozen vegetables (use whatever you have on hand: corn, green beans, peas)
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • pepper to taste
  • 4 potatoes – peeled, and cut into 1″ cubes
  • 1/2 cup milk
  • 1 tbsp butter
  • salt and pepper to taste
  • 2 oz of cheddar cheese

Directions after the jump.
