Menu Monday 9/7

Well, the not eating out didn’t go as well as I had planned. I could give a bunch of excuses, but I’ll just leave it there. Here we go with another attempt at eating at home every meal this week. If you were trying to get back on track with eating at home, how did you do?

Bolds are items I would like to add to the Home Ec 101 recipe stash and the linked items are already a part of the index. C.O.R.N. is simply an acronym Clean Out Refrigerator Night, other people call it Leftover Buffet. Sometimes, it turns into Mustgo Soup and others it’s just a little of this and a litte of that for everyone.

Tell me, Home Eccers, what is on your menu this week?

    I think I've been lurking long enough!

    I have for dinners this week:
    chicken and dumplings (homemade dumplings are the best!)
    bacon sandwiches
    pizza (bought frozen)
    scalloped potatoes & ham casserole
    tamale pie

    Since my brother moved in we haven't really had enough for leftovers. We occassionally do what my oldest calls a picnic and take all the cheeses, crackers, fruits, deli meats, and leftovers and put them on the coffee table. It then becomes a free for all and 90% of the food gets eaten before it goes bad. This is my son's favorite meal!

    I meal plan two weeks in advance (I go food shopping every Friday, but I plan on the Sunday before) and this week we had

    8/30 = homemade pizza
    8/31 = taco night
    9/1 = leftovers
    9/2 = leftovers
    9/3 = garlic-ginger chicken & rice (plus enough leftover chicken to send for lunches)
    9/4 = veggies bolognese & pasta
    9/5 = frozen crabcakes (prepared), pasta & sauce
    9/6 = pork loin, carrots, potatoes, string beans (extra pork for lunches)
    9/7 = chili – made double to freeze/lunches, also made three dishes of mac & cheese "casserole" – ate one, two are frozen
    9/8 = meat bolognese to freeze, chipotle corn & blackbean stew to eat (from vegan with a vengeance)
    9/9 = potpie – make an extra to freeze (yes, I am stocking up on frozen meals for days I am not here to cook)
    9/10 = chili leftovers
    9/11 = knishes (vegan book), hummus
    9/12 = veggie burgers, salad
    9/13 = leftovers
    9/14 = my sons birthday – we're ordering in as requested, but I am making the cake 🙂

    Not to give the impression this always works – a few of those nights other foods were planned, some weeks I just can't get on the ball and we order in, etc.. but I try my best to follow it. It works about 90% of the time.

    Split pea soup, hopefully chili (depends on the weather staying cool), roast chicken, pumpkin pie, pumpkin muffins for breakfast. Not sure past that…..

    I had that same problem. We ate out three times this weekend. (Can't do that again!)

    Not eating out isn't hard for me. DH eats out a lot (his choice, unfortunately) but I do so only rarely, primarily due to cost, but a close second is because quite often I don't feel well after I do so. I have no idea what they put in the food, so I prefer to cook my own.

    We have C.O.R.L. most days (Clean Out Refrigerator Lunch).
    I also try to make a list on Monday of items that need to be used soon. This week's list includes eggplant, zucchini, cabbage and some peppers. That's as much as I do for menu planning, for now.

      Typically we do alright. This week was rough. I did fine until I broke out in hives on Wednesday and then spent over an hour with all three kids(5,4,2) in an exam room. I'm not quite sure, but I think that just might be close to my personal hell. That said, I am extremely thankful they worked me in and understood that I couldn't get a sitter on that short of notice. . .
      We had a take-out picnic.
      Sunday we decided to eat out as a family.
      Is that often by some standards? No. By ours? Yes.

    Dadgummit. Now, I htink that I need to go get beef and have a roast beef with horseradish sauce because my mouth is simply watering at that thought!
    We're having spinach quesadillas, steak salads, chicken and pasta and grilled sandwiches this week

    We are definately trying to cut back on take out in our home…hard to do, though, when Mr. Becca works two jobs and I have been cranking out the d cakes all day. This week we are cleaning out the pantries and fridge in an effort to really get our groceries rotated on out of here. So we are having a lot of pasta, hot dogs (camping trip that didn't happen left us with TONS of hotdogs), hamburgers (ditto), breakfast for dinner, grilled cheese and canned soup, canned fruit and veggies (not my favorite which is why I want them out of my pantry), and hamburger helper.

    I just spent the morning cooking up a HUGE batch of waffles (close to 50, when all said and done). We had way too much baking mix (so far I have found 3 boxes??) and a penchant for waffles….so instead of buying the frozen ones I served up enough for BRUNCH and then bagged up the rest to enjoy for breakfast the rest of the week and on into next week.

    We almost always eat at home to save money. I don't have a whole week's menu planned, but I am planning to make a crock pot roast, a pizza (I buy refrigerated dough), and curry chicken over rice. That's as far as I've planned. I might try to make some maple cookies I found in a magazine–maple flavored and shaped like a maple leaf. As an adult I've never, yes it's weird, made cookies that you cut out with a cookie cutter. We'll see how it goes.

    also trying not to eat out as much–our big problem is friday,saturday,sunday–if it were up to my hubby we would eat out every day LOL but that's just not healthy or affordable—–tried it over the weekend by telling him we were eating leftovers sunday but he just couldn't stand it LOL he went out and got cane's chicken strips…..**sigh** LOL we definately don't eat out as much as we have in the past but it is still too much…..

    today I think we're doing burgers/hotdogs/fries and fried eggplant (LOL what a combination huh?)-these will probably be the last 2 fresh eggplants from our backyard garden patch so I am not letting them go to waste! need to sit down and get the menu planning going (meant to do it a few weeks ago but it didn't get done) so I can get more organized……

    I am also trying to not eat out. Went great this week, but only because we stayed home all week! 🙂
