I’m using up stuff from my pantry & freezer so it’s going to be a “creative” week at the Castle! :-)

Love your site! I like to take a few ears of cooked sweet corn and cut it off the cob to make a flavorful side dish with okra. First, I saute a couple slices of bacon until almost crisp, then add a small diced onion and saute until translucent. Then I add my corn with a few pods of sliced okra and some halved grape tomatoes and stir around just until the tomatoes start to soften a bit. Add a little salt and pepper and you’ve got summer in a skillet.
