Menu Monday 4/21

This week I will be picking strawberries and canning a year’s supply of strawberry jam. If you decide to take on a big project, I highly recommend trying to bribe asking a friend if they want to get involved. A partner can make even the most tedious task a more pleasant experience.
Tell me, what is on your menu this week?
- Monday - Vegetable soup, grilled cheese
- Tuesday - Taco salads with ground turkey
- Wednesday - Beef stir fry, fried rice
- Thursday - C.O.R.N.*
- Friday - Blackened tilapia, strawberry salsa, spinach and strawberry salad**
- Saturday - Pizza night, raw vegetables with dip
- Sunday - Steak, baked potatoes, mushrooms and zucchini, grilled bell peppers
*Clean Out Refrigerator Night

Sometimes the most simple ideas are the best. I just realised I don’t serve grilled cheese with vegie soup, but I could and should because my lot would LOVE that!
I love the C.O.R.N. idea too. We do this for lunch each day, so there’s not usually enough for tea as well. Great idea though.
I made a nice venison roast in the crockpot yesterday for Sunday dinner…the leftovers will become a pot-pie, fajitas, & soup throughout this week. Friday, though, I may do some fish, or make a pizza for our movie night.
I’m drooling reading about your strawberry-picking plans! Here, my rhubarb is only just poking through the ground. :o) Maybe three weeks til I can make a pie?….
I can’t WAIT for the stawberries to come in up here in New England. I’m going to freeze a bunch of them.
Can I make a suggestion? With summer coming up and the opportunity to get fresh, local veggies at good prices, have you though about doing a series on canning or freezing? I’d love to put up some fresh produce, but I don’t know how to do most of it.
