I always look over our schedule when planning out menus, consequently it is also the day that our readers get to hear about upcoming plans and events. My three year old destroyed me computer, which partially explains my recent absence and the lack of recipe updates. Now that I once again have access to my photo editing software things should be getting back to normal. I’m very excited to announce that we begin filming video content for the site </drumroll> tomorrow. Unrelated, we will be mentioned in the May issue of Woman’s Day. We’re very excited and boring our closest friends to tears.
Onto the menu, Mr. Heather is reaching the point in his diet plan where he can be slightly more flexible with his food choices, which makes my life easier.
Tell me, Home Eccers, what’s on your menu?
- Monday – Spaghetti with meatballs, Caesar salad
- Tuesday – Baked chicken (the exact spice combination has yet to be determined), green beans, zucchini and mushrooms
- Wednesday – Cajun seasoned pot roast, with turnips, onions, & bell peppers, rice and gravy
- Thursday – C.O.R.N.*
- Friday – Cioppino, bread
- Saturday – Pizza night: sauce, crust
- Sunday – Hoppin’ John, cornbread, collard greens
*Clean Out Refrigerator Night

I have got to know what ciopinno bread is…..it sounds good! Its not the rest of your menu doesnt tho.
It’s two separate items. Cioppino is a seafood soup very popular in California. I am thinking of a crusty, round loaf of plain white bread to dip in the broth.

Monday – freezer night – homemade gumbo (frozen) over fresh rice with spinach salad and rye crisps
Tuesday – roast chicken, mashed potatoes, curried carrots
Wednesday – BFD – local sausage links, yogurt pancakes (pancakes made with yogurt instead of milk), fruit compote
Thursday – grilled pork chops, rice with mushrooms and lentils, mixed salad with tomatoes
Friday – baked salmon, citrus+parsley rice, homemade rolls, broccoli
Saturday (meal out, I hope)
Sunday TBD

TUES: Squash beer soup with quesadillas
WED: Catfish (or salmon) tacos with whole wheat tortillas & chipotle slaw
THURS: Homemade pasta with white clam sauce & garlic bread
FRI: Dinner with friends — Cowboy Chili w/ black-eyed peas, salad, brownies

I cooked up all my foods, on my menu, and put them in the freezer. The kids are sick and I think its Wednesday already.

For the zucchini and mushrooms recipe, what happens if you don’t put cornstarch in? Does it kill the recipe? I don’t keep cornstarch, but it is because I don’t really know how to use it. Thanks!
