Menu Monday 1/25/2010 – The Pantryless Week

by Heather on January 25, 2010

Heather says:
Well pantryless isn’t entirely accurate, Heidi and I did bring a few staples. That said, we’re both the type of cook who relies on a well-stocked pantry to create kitchen miracles without spending a fortune at the store. Here’s what we came up with to enjoy the week without being a slave to the kitchen or putting too large of a dent in our budget.

  • Monday – Pizza & salads
We could have ordered out, but the only place that delivers here is on the spendy side (14 for a large cheese + $2 for any additional topping. Yikes!)
  • Tuesday – Slow roasted bbq chicken (we brought the rub), roasted green beans, potato salad
  • Wednesday – Patty melts, steamed broccoli, potato wedges
  • Thursday – Brinner (that’s breakfast for dinner)
  • Friday – Chicken salad, fresh vegetables, crackers, fruit
  • Saturday – Taco night + fridge clean out
  • Sunday – on the road again

I honestly thought this was titled "The Pantyless Week" on first glance. Then I did a full-on double take.

Hmmm much of my comment was erased somehow…I also said that your menu looks great, and that I can't wait for things to finally settle down with our move and moving my father-in-law back home so I can start planning menus for the week again!

how's the weather in florida this week anyhow. i'll have to book a resort down there during the winter and escape the near tornadoes we almost got this week.

Brinner – that made me smile.
I LOVE LOVE BBQ chicken. My family, however — sigh. I make it occasionally and force them to cope. lol

I liked the Brinner post too. We had this often when I was little (due in part to the chicken coop in the back yard). My kids enjoy it too.

I missed something–who's Heidi? Where are you on the road to/from?

Anyway, thanks for sharing.

Heidi is a friend of mine, we're currently in Florida, pooling childcare / meal duties. It's almost like a break and it's warm.

Brinner can vary from home to home. We usually have pancakes or scrambled eggs. But, yes cereal has happened from time to time, too.
