    Menu Monday 12/31

    • Monday – albondigas, cheese quesadillas, chips & salsa, bacon wrapped jalepenos 
    • Tuesday – collards, hoppin’ john, cornbread
    • Wednesday – chicken with black beans and rice, zucchini and corn with cilantro,
    • Thursday – BBQ pork in Carolina mustard sauce, rice, broccoli, carrot raisin salad
    • Friday – Tuna noodle casserole*, peas, salad
    • Saturday – C. O. R. N**
    • Sunday – beef roast, mashed potatoes, roasted carrots and celery

    *The kids love it and it’s different from the way a certain someone who knows who she is used to make it.

    ** Clean Out Refrigerator Night.  First date night with an actual sitter since July.

    Oh my, look at all that tasty southern home cooking. I especially find Ree’s bacon wrapped peppers interesting, I’ve yet to head on out to the supermarket to gather the necessary software for that one.

    My left over turkey stew pales in comparison.

    Congratulations on your date night!
    I’ve had bacon-wrapped dates (same concept as the recipe you linked too, only dates with no stuffing) and they are unbelievably good. And SIMPLE. I rely on these babies for an impressive, super-easy starter when we have people over! Now I have to try the jalapeno recipe too!

    I just love the Pioneer Woman’s recipes! I bet those bacon-wrapped jalepenos will be a hit!
