    Menu Monday 1/14

    Another week, another menu.  Being the fickle person I am, salads may entirely be out the window this week, in lieu of seasonal or frozen produce. I will also be thawing out the turkey we received for Thanksgiving.

    Monday Vegetarian pot pie, sautéed cabbage
    Tuesday Chicken curry with broccoli, rice, curried sweet potatoes
    Wednesday C.O.R.N.*
    Thursday Shredded chicken burritos, black beans, corn and zucchini with cilantro
    Friday blackened salmon, garlic mashed potatoes, steamed vegetables
    Saturday chicken fingers, macaroni and cheese,  peas, sweet potato wedges
    Sunday Turkey, dressing, gravy, green beans, squash

    *Clean Out Refrigerator Night

    Great menu! Thursday night looks particularly good. And wow – you’re getting a lot of mileage out of the Thanksgiving turkey! :-)
