Menu Monday 11/2/2009

Heather says:

Yesterday’s turkey dinner has given us some leftovers to enjoy for the next two days. There was hardly any turkey left (from the two we made), so we’ll just have sandwiches rather than trying to do anything special with the meat. I’ll use one of the skeletons to make stock which I’ll freeze for soup at a later date.

  • Monday – C.O.R.N.
  • Tuesday – C.O.R.N
  • Wednesday – Grilled sirloin steaks over some kind of Southwestern style salad (Obviously I’ve put a ton of thought into this one)
  • Thursday – I’m going to try Sue’s No Tomato Chili, cornbread (with corn), again with the salad
  • Friday – Shrimp and grits, steamed green beans
  • Saturday – Pizza Night
  • Sunday – Β Is going to be a lazy day, if I have to tie everyone to the couch. We’ll graze for dinner, mooch something (hi mom!), or Mr. Heather can cook. I’m taking that day off.

    I was trying to figure out what to have for dinner since we are out of EVERYTHING and I stumbled across your site, which I quickly bookmarked and then started searching through. I ended up with a C.O.R.N menu of shepherd's pie using left over meat loaf that I broke into pieces and then made mashed potatoes from the 5 I had left in the bin and 2 carrots (boiled them whole with the potato) and half a can of corn. Made the mashed potatoes with some beef broth I had in the freezer and poured some over the meatloaf to make it moist. It was super quick and hubby got to eat before he ran off to his class!

    As I am playing 'mom' to 3 teenagers this week, babysitting while their parents are in Mexico, I actually have a menu put together during my term of duty: )
    Sat (Halloween): pizza–it's not delivery, it's Digiorno!
    Sun: Homemade Lasagna, roasted asparagus, fresh baguette from Normandy Farms
    Mon: Red beans & rice with turkey keilbasa, steamed broccoli, homemade mac & cheese, biscuits
    Tues: Grilled steaks, roasted cauliflower, roasted yukon gold potatoes, sister shubert rolls (the kids fave!)
    Wed: Chicken & rice, blanched asparagus, corn pudding, more sister shubert

    Started some chicken broth brewing in my slow cooker this morning, so there will be some kind of soup this week.

    By the way, I have a teenager in my house who eats anything that isn't nailed down (except stuffing….he HATES stuffing). I wish CORN were an option for us but he eats anything and everything that is leftover from our meal. My tupperware is getting dusty from all its non-use!

    The kids are going to have Halloween candy sitting around all week (I am resisting my "fun sponge" impulses to put it all up now BEFORE the cavities set in). So I tried to create a menu that would intice them to maybe NOT have that fifth piece of candy before dinner. Here is what I have come up with, thus far:

    TONIGHT (Monday): BFD (Breakfast for Dinner…..Waffles, Bacon, Eggs, Fresh Strawberries and OJ)
    Tuesday: Twice Baked Potatoes, Roast Beef and Fresh Carrots
    Wednesday: Pesto Over Cheese-Filled Ravioli, Caesar Salad, Fresh Bread
    Thursday: Tacos, Spanish Rice, Refried Beans
    Friday: Vegetable and Beef Soup, Cornbread
    Saturday: Spaghetti
    Sunday: Mom's Night Off (ie: something out of a BOX)

      Heh I think I have that tendency, too. (I originally wrote fun sponge, but decided it looked like something the pr0n bots would leave as a comment). Your menu sounds fabulous.

    I posted my menu on my blog at Zombie Mommy. It's has to be a fairly easy week food wise, since the baby still needs breathing treatments every 3 hours, my upholstery class runs for 2 more weeks, and my husband stayed home sick today.

    Thursday you're makin "Corny Cornbread!!!" LOL–I've gotta make up a batch myself…I just ran out. Let's see…last nite, we did pot roast with carrots and onion…and the hubs made homemade mashed potatoes and gluten free gravy…soooooo yum! Tonite, chicken and rice casserole and some green veggie…I haven't decided yet. Depending on weather, the rest of the menu can be switched….sweet and spicy southwestern pork chops, saffron rice, green beans….potato soup and "corny cornbread"…steaks and baked potatoes…chicken enchiladas, mexican rice, and refried beans…homemade beanie weenies (I'm pregnant, it's a craving! What are you gonna do? LOL) and cornbread……and that's all I think I've got available….SHOULD get us thru the week. Oh, and I'm SURE we can have a C.O.R.N. nite sometime this week if I don't feel like cooking. πŸ˜€

    Leftover fusilli pasta with a sausage-tomato sauce. Every night. Well, until I run out, at which point I'll switch to pizza. I love being in college.

    Yesterday, I put together a sort-of shepherd's pie for tomorrow's dinner – using leftover pork, a gravy made with the braising liquid (apple cider – yum!), some carrots, roasted squash, swiss chard and other veggies I had knocking around. . . with a mashed potato-parsnip topping.

    I almost wish it was tomorrow already.

    You have me hungry for a turkey dinner. πŸ™‚ I may adjust my fried chicken tonight and roast it and throw in a side of stuffing – lol.
