    Menu Monday 11/17

    Heather says:
    Thanksgiving is looming on the calendar and I have to clean out my fridge and make room for next week’s produce. I know I have been a little lax posting recipes and I hope to return to it this week or next. These weekly plans are what I hope to cook for the week, but I get off track like the rest of you mortals.* Sometimes I stand there with the fridge door hanging open hoping something will jump out at me and shout, “Here, cook me, I’m quick and no one will complain!” If some items were recently on the menu plan, chances are I didn’t get around to them.

    Tell me, either via link or in the comments, what is on your menu this week?

    • Monday Chicken and dumplings, tossed salad
    • Tuesday 15 Bean Soup with smoked neck bones, cornbread
    • Wednesday C.O.R.N.*
    • Thursday Pork chops with blackberry sauce, colcannon, steamed broccoli
    • Friday Eggplant parmigiana, tossed salad, garlic bread
    • Saturday Homemade Pizza Night (Pizza sauce, pizza crust)
    • Sunday Albondigas, cheese quesadillas

    *I kid people, I kid.
    **Clean Out Refrigerator Night

    Monday: Cheeseburgers, chips, pickles
    Tuesday: Pizza Night
    Wednesday: Pea & Potato Curry, Brown Rice
    Thursday: Keilbasa & Potatoes in the crockpot
    Friday: Pad Thai (homemade from scratch)
    Saturday: B.F.D. (Breakfast for Dinner) – Bacon, Egg, & Cheese breakfast sandwiches & OJ
    Sunday: Thai Green Curry, Brown Rice

    I am cleaning out the fridge too. We are going out of town for Thanksgiving but I am bringing a lot of food with us to contribute to the meal. My family loves breakfast for dinner. It is probably their favorite meal!
    I have always made my shepherd’s pie with “white” sauce. My kids are not a big fan of gravy.

    Monday: Bangers and Mash
    Tuesday: Leftover Chix Stew (for me), ravioli for kids, bread knots
    Wednesday: Chix and rice, salad
    Thursday: Pizza, green salad
    Friday: Fajitas
    Saturday: Beef Stew
    Sunday: Spaghetti and meatballs, leftover bread knots

    Hmmm, lets see if I can remember…

    Monday: Mac and Cheese (I have a huge interview tomorrow and will be studying), green beans
    Tuesday: we’re out of the house
    Wednesday: BBQ Chicken Sandwiches with Pepper and Scallion Potato Salad
    Thursday: Thanksgiving potluck with friends, I’ll bring green beans and rum cake
    Friday: Turkey, Edom, and Orange Cranberry Paninis
    Saturday: pizza night with friends- Pepperoni and cheese pizzas

    Tuesday thru Thursday: Easy Shrimp Paella (I didn’t cook last night; picked through the pantry and nibbled instead)
    Friday thru Saturday: Pizza (homemade)
    Sunday: Dinner with family, I bring the bread.

    What can I say? Being a college student can get complicated, but my meals definitely aren’t!
