Cookie-a-day: Peanut Butter Balls

Peanut Butter Balls

Ingredients:

  • 2 sticks of butter – melted
  • 1 lb powdered sugar
  • 1 tsp vanilla
  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 cups peanut butter

Mix sugar and graham cracker crumbs in a bowl, add the peanut butter.  Melt the butter and pour over the mixture.  Add the vanilla, stir well, and roll into balls.

For variety roll in coconut flakes or crushed nuts,  sprinkle with powdered sugar, or dip into chocolate.

For chocolate covered peanut butter balls (or buckeyes) chill for at least one hour before dipping into melted chocolate.

Chill at least one hour.

I made a recipe similar to this and shaped them into bees instead of balls.

Make an oval ball. Using a tooth-pick, make 2 eyes on one end. 1/3 of the way back from that, poke in 2 slices of almond for wings. For the back 2/3s, melt some chocolate chips in a zipper baggie in the microwave, snip a corner for a tiny hole, drizzles lines for the stripes on a bee.

These were so well received and really took very little more time (my minions did most of the decorating, I just did the chocolate stripes).

One pound of powdered sugar!?! Yowza.

Those are really good -- especially if you do the chocolate coating. I had an aunt who would make those for almost every family get-together.

Good Lord...I made these tonight and I think if you weren't already married...I would be at your doorstep with a fat diamond. ROTF....

I assume use unsalted butter?

I bet these would be really good on...I don't know...something like Christmas Eve. ::hint::
