    Cookie-a-day: Peanut Butter Balls

    Peanut Butter Balls

    Ingredients:

    • 2 sticks of butter – melted
    • 1 lb powdered sugar
    • 1 tsp vanilla
    • 1 1/2 cups graham cracker crumbs
    • 1 1/2 cups peanut butter

    Mix sugar and graham cracker crumbs in a bowl, add the peanut butter.  Melt the butter and pour over the mixture.  Add the vanilla, stir well, and roll into balls.

    For variety roll in coconut flakes or crushed nuts,  sprinkle with powdered sugar, or dip into chocolate.

    For chocolate covered peanut butter balls (or buckeyes) chill for at least one hour before dipping into melted chocolate.

    Chill at least one hour.
