Dear Home Ec 101,
I lost my head and signed up to bake something for my mothers’ group. I’m a mess in the kitchen and need something easy. We meet in the morning, if that helps.

If you can make a cake from a box mix, you can handle these muffins. These are cakelike with a hint of vanilla and are not overly sweet, unless you have a heavy hand with the powdered sugar.

Donut Muffins
- 2 cups all purpose flour
- 1/2 tsp salt
- 5 tsp baking powder
- 1/2 cup sugar
- 2 eggs – beaten
- 1/4 cup melted butter (that’s 1/2 a stick)
- 1 cup milk
- 1/2 tsp vanilla
- powdered sugar
Preheat the oven to 425F. In a mixing bowl combine the flour, salt, baking powder, and sugar. Stir in the eggs, butter, milk, and vanilla. The batter will be slightly lumpy.
Pour into greased muffin tins and bake for 15 – 20 minutes.
Sprinkle with powdered sugar.
