Lentil Casserole

  • 2 cups dried lentils
  • 4 cups water
  • 1TBSP extra virgin olive oil
  •  1 onion – diced
  • 2 cloves garlic – minced or pressed
  • 2 celery ribs chopped
  • 2 carrots – chopped
  • 1 red bell pepper (optional)
  • 1 green bell pepper (or two if the red is omitted)
  • 1 tsp basil
  • 1/4 cup soy sauce
  • 2 cups rolled oats
  • 2 tsp vinegar

In a lidded sauce pan heat the lentils and water over medium heat for ten minutes, then reduce to low, cover, and simmer for 20 – 25 minutes.  The lentils should absorb most of the water.  Stir occasionally

lentilcasserole3.jpgWhile the lentils are cooking, heat the olive oil over medium heat.  Cook the onion until soft, add the celery, carrot, bell pepper, and garlic.  Cook for 3 – 4 minutes, the carrot should be beginning to soften.  Stir in the basil, soy sauce, and vinegar.

Preheat the oven to 350F and grease a 9 x 9 pan.

Stir the lentils into the vegetables with a fork, as you want the lentils be somewhat mashed.  Stir in the oats.  Press into the pan and bake 20 – 25 minutes and firmly set.

  1. The recipe was originally called Lentil Loaf, but I truly find the idea unappetizing. Loaf isn’t the best food descriptor unless it applies to bread or meatloaf specifically.

  3. Maybe you can help me out with something…? I want to order all of my food online from now on because of various reasons, but I don’t know where to go for quality food. I have tried 2 companies so far, Fresh Dining, and and Celebrity Foods, but I wanna get others I can try out. Do you know of any? The main thing I’ve ordered so far is steak. I guess you can say, I’m a steak junkie. LOL!!! From what I have found out (from what I have ordered so far) I think I am able to regulate the quality of beef I buy. I hate going to a store and getting that crappy slab of beef that I have to cut down until there is like nothing left. Hahaha!!!! (its so true though) Anyhow, sorry that I made this comment so long. If you can help me out or point me in a direction where I might find more quality foods online, I would greatly appreciate it. Have a good day or night! (depending on when you read this) LOL!!!!

    • Why are you trying to order all of your food online? It is kind of weird. You might find friends at the store, but you won’t find any shopping online. Plus, if it’s cutting meat which you really hate, any grocery store will cut it down for you if you ask them and you can go to a butcher that will also do it. Not that I am condoning that, since I am a vegetarian. I just think you might like friends at the stores. One thing you might be interested in is CSAs, Community Supported Agriculture, where you subscribe to receive some produce or whatever a farm offers each month or even weekly or biweekly, depending on the subscription. You take a risk, because you can’t be sure if the farm will do will each year, there might be a severe drought or flooding or something that might affect crops. But that doesn’t usually happen, right? Usually, you will share in the bounty. Anyway, try a CSA! Also, you might find something local, a lot of companies have things you can buy online, but local is best, because you cut down on the use of fossil fuels being used to bring things to you. Another reason to reconsider going to stores in the first place. To each their own!

  5. Eventually got round to trying this. Wasn't sure if I'd enjoy it, as I haven't had lentils for years,but I must say I was pleasantly surprised.

  6. I made this last night but I don’t think I cooked it long enough. It cooked for 25 and seemed firm when I took it out, but when I went to serve it everything fell apart. Also, I cooked my lentils until they were soft (about 30 min) but there was still a lot of water left so I drained it, should I have left it in?
