As part of my plan to get back on track, I need to get back into menu planning.

  • Meatballs in marinara over grilled zucchini
  • Shrimp stir fry with spring rolls (Stepdaughter’s request this will be our Fearless Friday recipe)
  • Sloppy Joes, refrigerator pickles*, coleslaw*
  • C.O.R.N.**
  • Grilled chicken, grilled tomatoes, grilled corn on the cob, garden salad (Sense a theme there?)
  • Grilled tuna terriyaki* , tuna melts for the preschool set (We’ll share for sampling purposees) garden salads, (small potential for a cold soup if I have time)
  • Sub sandwich night, raw vegetables with dip

  1. I had the most yummy Spring Rolls, last month, at Sesame. I haven’t had them, this good, since Cali days. Please share your recipe. I have wrappers in the freezer.. but I’d let you have them, if you let me eat them. 😛

  2. I’m going to try to make my granny’s southern fried chicken–at least that’s what I call it; she was from Texas and made it for years until she died in her 80s. It may seem simple to most people, but I’ve only made it once. My uncle said he has tried for years, but has never managed to make it as well as she did. So I won’t expect a miracle, just something that tastes good.

  3. This looks great–thanks for the new ideas! I will probably try most of them. It makes me realize that I’m hungry and I need to go grocery shopping, just looking at the menu!

  4. mon- grilled steak and everything salad
    tues- crock pot garlic roast chicken and brussels sprouts
    wed- shrimp boil (shrimp, new potatoes, corn)
    thurs- spaghetti and turkey meatballs w/ steamed broccoli
    friday- grilled teriyaki chicken thighs w/ rice and asparagus

    any leftovers can be added to omelets, pasta, hash or pizza dough for lunches.

    frozen and fresh berries and fruit smashed, blended and frozen for pops of all kinds.

  5. Everything looks good, but I’ve gotta tell you, what really caught my attention was the idea of grilled zucchini!

    Husband’s not a huge fan of vegetables in general, other than a select few, and especially not the summer squashes. How anyone can dislike a vegetable that’s mostly water, I have no idea, but there you go.

    I’m trying to keep the attitude, though, that “just because YOU don’t like it, that doesn’t mean I can’t enjoy it” – I’ve been missing my squashes and eggplants! 🙂
