Honestly, I don't really cook on Fridays. It's my night to skip it :) However, the nice lady here who doesn't like cabbage (me) will be making Cabbage Rolls in the slowcooker Monday, and has offered to make from-scratch fresh sauerkraut for himself. Yes I actually intend to eat at least a nibble of each.

Mmmm. I love spring rolls but had to give them up because I can't be sure the wrapper is rice rather than wheat, and I'm still looking for rice wrappers. Maybe I just don't know what they look like.

We take a trick from the Vietnamese and use leaves to wrap our fillings. Iceberg lettuce is a favorite, but more strongly flavored greens go well with nontraditional fillings, like leftover curried tofu and fresh microgreen sprouts.

And don't forget the <a href="http://en.wikipedia.org/wiki/Sriracha" rel="nofollow">Sriracha</a> sauce!

The spring rolls look good. I'd like some right now, please!

Well, as usual I haven't gotten to the Heather-like level of fearlessness on a Friday. However, this week I'm trying about four new recipes, and for me that is a lot. I used to make the same things over and over, and since connecting with Home-Ec 101 I've become much more motivated to try new things. So today I made Heather's "Spatchcock Chicken"--a.k.a. grilled whole chicken. Man, it was really really REALLY good, and super easy! My husband instantly declared that it could become a regular dish at our house.

Besides that I tried making a French pizza called Pissaladiere and some oatmeal-banana pancakes (2nd time trying those); I'm going to make Moussaka (a Greek eggplant lasagna) and some pumpkin/sweet potato/zucchini soup. That's a lot of new for me.

I can easily eat a few spring rolls for a meal. This version looks delicious.

Today's Fearless Friday for me was to try Soy Hot Dogs. In an effort to not tire of other meats that aren't fatty [turkey this, turkey that, chicken this, chicken that], I've been making efforts to try other protein sources.

Verdict: They help subside a craving, so I don't find myself making a mini grill out type of meal with all the fixins that would derail my #backontrack efforts to boot. It's also helpful that they come packaged in servings of 6. Which also helps in taming a craving.
