		<description>I ran this problem by two of my children, &amp; one says breakfast burritos (scrambled eggs w/ cheese &amp; salsa), &amp; the other says a nice big batch of pancakes.  I say that I like the fritatta idea, &amp; maybe some cut-up fruit.  We can make muffins pretty fast around here too, so I might throw those together too.  :o)

It would have to be some egg based thing, omelets or a quiche. Oooh, a spanakopita recipe that I have is really yummy and easy, and I actually have phyllo dough in the freezer, and fresh baby spinach and eggs. I&#039;d have to substitute cheese wise though, and use cheddar instead of feta. Still, cheese, eggs and spinach pie? Whats not to like :) That and some sliced oranges and apples and maybe a fruit smoothie.</description>

Quiche Lorraine, Quiche Florentine
-Pie crust (froz or fresh), 4 eggs, 1c whole milk, 1.5c shredded swiss and filling (ham cubed with sauteed onions or spinach pressed dry) 375 for 30
Spinach Berry Salad
-baby spinach, berries, seeds or nuts, cucumbers , red onion or not.  quick dressing of jam, equal vinegar. whisk in oil, s&amp;p to taste.</description>
