A cooked chicken is only $1 more than a raw one, so it&#039;s an easy and healthy answer.  The problem is that I consequently have a lot of leftover chicken scraps.  I&#039;ve made stock with the carcasses, but what to do with the meat shreds?  Chicken Florentine, King Ranch chicken, chicken tacos, maybe chicken soup...and fill in between with something from the freezer like salmon or pork chops.Breakfasts and lunches at my house are usually pretty freeform.  Cereal or oatmeal or leftovers in the mornings, leftovers for lunch, assuming we haven&#039;t gone into town; if so, lunch is eaten at an inexpensive homestyle diner.
