Well, I certainly have my moments and while writing last week’s menu I certainly had one. My son’s birthday is today, not yesterday as I had noted last week. As one of my former teachers used to say, “monitor and adjust, monitor and adjust.” Thankfully we have very small parties for our children so no one was greatly inconvenienced.
On to the menu:
Lunch
- open faced turkey melts on bagels, salad
- cheese quesadillas, refried beans, fruit
- PB&J, yogurt, cut veggies
- spaghetti with marinara
- ham and cheese wraps, broccoli
- fish sticks, fries, green beans
- leftovers
Dinner
- Monday – homemade pizza, salad, cupcakes & ice cream
- Tuesday – (meatless) Unsloppy joes, roasted zucchini, salad
- Wednesday – C.O.R.N
- Thursday – lasagna, garlic bread, salad
- Friday – blackened salmon, garlic mashed potatoes, steamed broccoli
- Saturday – cream of broccoli soup, tuna melts
- Sunday – pork loin w/cracked black pepper, roast veggies, rice, gravy

ooh tuna melts. been a long time since we had those! I think I will be adding that one to our menu this coming week. great ideas!
Sounds good! Tell me more about roasted zucchini. . . I have several to use up. It sounds easier than the spice cookies or zucchini-crusted pizza I had in mind.
Maybe someday I will get to the point I am planning lunches too. I am curious though, what is C.O.R.N.?
