I had a wonderful time in Asheville at the Type-A Mom conference and met a lot of interesting people. Now that I’m back home, it’s time to get back on track and into the routines that keep me from going completely nuts. It’s going to be a very busy week, so I won’t attempt to get any new recipes added to the index, so this week’s menu should be easy to stay with.
- Monday – Black bean burritos*, Spanish rice, fried green corn + cilantro
Leftover beans, rice, and corn will be frozen together as a base for a future soup. - Tuesday – Spatchcock grilled chicken**, garlic broccoli, oven roasted potatoes, lentil pilaf
Leftover potatoes will be used for breakfast skillets in the morning - Wednesday – CORN (Clean Out Refrigerator Night)
- Thursday – Split pea soup, sweet cornbread
- Friday – Blackened catfish with fruit salsa, cheese grits, tossed salad
- Saturday - Homemade pizza night
- Sunday – Wine braised pot roast, oven roasted vegetables, rice
*I’ve been craving Moe’s Burritos, so I will be attempting a recreation at home. I don’t think I could call it a homewrecker without copyright /trademark issues, but that’s what I’m going for.
**Having lots of side dishes prevents the family from devouring the entire chicken, the leftovers will be chicken salad for lunch.

I've got to have quick and easy stuff for the next few weeks, because I have an upholstery class 2 nights a week and hubby has a men's group at church. Unfortunately, I'm starting to run out of ideas, and hotdogs have been banned for the next month.
My menu this week is:
Chicken and artichokes in white wine
stroganoff
tuna sandwiches
breakfast for dinner – pancakes, eggs, and bacon
pizza – will pick up from the pizza place on my way home

my mom gave me a 10 lb bag of chicken – frozen in in one solid lumb o.0 — so that will get thawed out, should be done by wed — some of it will get cooked in the crock pot, some will get baked and some will end up on the grill
today: hot dogs 'n' chili with cheese wrapped in a tortilla shell and baked (10-15 min, 375 oven) veggie
tomorrow: minestrone soup
Wed: grilled chicken
Thur: grandma's make'n dinner
Fri: children go to their dad's and i get take out!!!
Sat: i eat left over take out – lol
Sun: chicken soup
It is still hot in Arizona……so we are trying to keep meals simple and cost-effective (oven-wise). Plus this is a busy, busy week for me with the cakes and with Mr. Becca working his usual TWO jobs.
So…..without further ado.
Monday: Grilling Out. Fresh Corn on Cob, Hot Dogs, Strawberries and Raspberries, Bell Pepper Salad
Tuesday: Special Night for Oldest Son, NJHS candle lighting ceremony: TAKE OUT for us & extended family (I am making a REAL cake?)
Wednesday: Breakfast for Dinner, Fresh Waffles (freezing lots of leftovers for weekend), Eggs, Bacon, Fresh Fruit
Thursday: Pot Roast.
Friday: Homemade Pizza
Saturday: Mr. Becca and I to celebrate 6th wedding anniversary……hoping for a nice dinner out just us two while his parents keep the kiddos (fingers crossed!)
Sunday: Turkey Breast, Stuffing, Yams, Green Beans (I'm in the mood for a Thanksgiving Sampler)

I'm going to still the Thanksgiving sampler idea! I seriously never even think about having Turkey, other than thanksgiving.
I think my early Thanksgiving dinner will happen in two weeks. I'm going to do a trial run for pictures and to make sure I have all the recipes posted so I can do a shopping list / menu this year.
I really would like to see the recipe for the bell pepper salad.

I have been making my version of the Triple Lindy Streaker from Moe's and it has been rocking my world. Would be doing Homewreckers, but I don't really keep guacamole around. I need to do a menu for this week… maybe I'll go work on that now.

I make the guacamole, it is super fast and disappears even faster.
1. Roast-I bought the cute tiny potatoes and cute tiny onions to throw in whole (instead of slicing potatoes and onions) and extra mushrooms. I am oddly very excited about these miniature vegetables.
2. Beef Quesadillas
3. Build your own Grilled Cheese and tomato soup (have to have an easy item planned, we had it tonight, perfect because it was 59 degrees out and was such a comfort dinner). I had 3 choices for cheese, ham, turkey, tomato, and onion as choices.
4. Chicken Pot Pie
5. Hamburgers (I am going to try a new recipe this week…but haven't decided what) corn on the cob and salad
6. Steak, garlic french bread, asparagus
7. Parmesan stuffed chicken…we had this Saturday (did my shopping in Friday) and I have no idea what we had with it.
Some of my more frugal cohorts will disagree, but sometimes I am all for whatever it takes to cook at home. First, it establishes a routine and second if it makes the experience enjoyable, a person is more likely to find cooking less of a pain in the butt.
Here's my menu for the week:
Monday – Paula Deen’s Macho Nachos
Tuesday – Scalloped Potatoes and Beans in the crockpot
Wednesday – Sweet Italian Sausage Tortelloni with salad and garlic bread
Thursday – Spicy Salmon and Rice Salad
Friday – BBQ Chicken Calzones
Saturday – Rachael Ray's Oven Baked Corn Dogs with Tater Tots and green beans
Sunday – Southwestern Corn Soup with salad and rolls
I definitely want to try making a homemade Homewrecker sometime – my husband LOVES Moe's but we are trying not to eat out for a while
-Monday: out (evening meetings)
-Tuesday: shrimp risotto w/asparagus and spinach salad (PS: it was GOOD…I think I'll put mushrooms in it next time!)
-Wednesday: chicken tikka masala w/some more asparagus…it was on sale (never made any Indian dishes before, so this is my brave dish for the week!)
-Thursday: chicken strips with mac & cheese and green beans
-Friday: chili and curried cole slaw
-Saturday: beef stew and spinach salad
I have one new thing in here this week (tikka masala), but most of it is old reliable things I can fix quickly, since my husband and I both REALLY busy this week!
