I’ve been trying to do better with lunches this summer too! I usually try to to make generous dinners and then use the leftovers for lunches – but that doesn’t really travel well if we’re going out.
Hummus is a staple at our house. So is a good peanut butter sauce (I use one from Moosewood, but any Asian peanut sauce will do) that we eat over any kind of cold vegetables. We also make cheese quesadillas often – they travel well, too.
I forgot about mini pizzas – brilliant.
Congratulations on your baby! We just took a meal to a family with a new baby in our church – gotta love that kind of community support.

Does anyone else put a few potato chips inside their tuna sandwiches? Gives it a nice Crunch.

Your lunches sound delicious – at the moment, I’m going through a real boring lunch phase! Toast with baked beans, toast with cottage cheese, toast with …. (you get the boring picture).

Great ideas about lunch. I need to work on these too. I love cold salads, but the kids not so much. It’s hard to come up with too much that’s portable for them, so thanks for the ideas!
