I usually try to to make generous dinners and then use the leftovers for lunches - but that doesn&#039;t really travel well if we&#039;re going out. Hummus is a staple at our house.  So is a good peanut butter sauce (I use one from Moosewood, but any Asian peanut sauce will do) that we eat over any kind of cold vegetables.  We also make cheese quesadillas often - they travel well, too. I forgot about mini pizzas - brilliant. Congratulations on your baby!
