    Menu Monday 8/20

    I want to thank everyone for their well wishes and congratulations. Elizabeth and I are home and settled in. For the next two weeks our dinner is being provided by families in our church. This gesture is deeply appreciated and we are very thankful.

    With dinner taken care of, I have decided that now would be a good time to begin adding lunch to the menu plan. While it will not be as varied as our dinner menu, I have noticed I tend to fall into a rut, reaching for items out of habit. This does not mean we will be abandoning good, old fashioned PB&J, no, it’ll just be limited to once or twice a week. Rather than assigning days I’llĀ  plan seven meals, with several being brown-bag friendly for trips to the park or other places around town. My goal is to limit fast food to a once a month treat.

    1. PB&J, yogurt, carrot sticks
    2. Raw veggies, hummus, cheese cubes
    3. Tuna salad sandwiches, cucumber & ranch
    4. Taco salad
    5. English muffin pizzas, fresh fruit
    6. Spaghetti w/ meat sauce & cheese
    7. Black bean and cheese quesadillas, fresh fruit

    What a good idea! Lunch is always a stumper for me, and I want to break our fast-food habit. Have a great week!

    Great ideas about lunch. I need to work on these too. I love cold salads, but the kids not so much. It’s hard to come up with too much that’s portable for them, so thanks for the ideas!

    That is a really good idea! I am good at the dinner planning but my lunches are really boring. These are great ideas, thank you!

    Your lunches sound delicious – at the moment, I’m going through a real boring lunch phase! Toast with baked beans, toast with cottage cheese, toast with …. (you get the boring picture).

    Does anyone else put a few potato chips inside their tuna sandwiches? Gives it a nice Crunch.

    A pleasant surprise if you aren’t expecting it.

    I’ve been trying to do better with lunches this summer too! I usually try to to make generous dinners and then use the leftovers for lunches – but that doesn’t really travel well if we’re going out.
    Hummus is a staple at our house. So is a good peanut butter sauce (I use one from Moosewood, but any Asian peanut sauce will do) that we eat over any kind of cold vegetables. We also make cheese quesadillas often – they travel well, too.
    I forgot about mini pizzas – brilliant.
    Congratulations on your baby! We just took a meal to a family with a new baby in our church – gotta love that kind of community support.

    oooh thanks, I will have to start this too. Lunches are always so hard come up with new ideas, and here we go…. you guys are the best!
