    Menu Monday 8/18: Ivy Edition

    Ivy says:

    I’m feeling much better today, and got a clean bill of health from my doctor this morning. I’m in housecleaning Hades now, though, so I thought you guys might like to take a look at what my menu is this week.

    Monday: Runskis (I tried to find a recipe for this online, but failed. It’s a family recipe- basically a pastry/biscuit-like outside with a ground beef and cabbage filling. I also could be spelling this wrong.), green beans.

    Tuesday: Chicken Pad Thai

    Wednesday: Church night, we eat at my mom’s. Knowing my mom, we’re having chili.

    Thursday: Mr. Ivy is off, so it’s Iron Chef night. I give him the “secret ingredient” and he cooks something fabulous up. The secret ingredient this week is zucchini. Don’t tell anyone.

    Friday: Gazpacho and cucumber sandwiches

    Saturday: Oven fried chicken fingers, french fries, mixed veggies

    Sunday: Roast chicken, baked or sauteed garden veggies (whatever I find at the farmer’s market on Friday), mashed potatoes

    Why yes, we DO eat a lot of chicken at Chez Ivy. Well, Home Eccers, what have you got that’s good to eat this week?

    We called those pastry-pockets with cabbage and sausage “bierocks”… googling seems to be successful.

    Tonight we’re having Taco Balls, at my kids’ request. It’s my variation on sausage balls. They love to dip these in salsa or nacho cheese sauce.

    Taco Balls
    1 lb ground beef
    1 c. shredded cheddar
    1 packet taco seasoning
    3 c bisquick

    Mash it all together with your hands until well mixed. Roll into marble-sized balls. Bake @ 375 deg for about 15-17 minutes, or until they start to brown.

    Oh wow — I think those thingies – whatever they are called, sound really good! I love your last commenters “taco balls” recipe too! I think my kids would love those! Gotta try them!

    I make something similar- but like the other commenter, we call them bierrocks- here’s my recipe, though the bread sounds different.

    In my neck of the woods (Nebraska), they’re called Runzas. We have chain restaurants and everything (www.runza.com). Delish! They also have a swiss cheese mushroom version, and an Italian one. And now I’m hungry . . .

    After reading all these, my stomach says loudly I’m hungry! I defrosted a huge amount of hamburger and figure I can get meatloaf and several patties over the grill. Corn on the cob is at all the veggie stands. I hope there’s leftover meatloaf because I will use it for sandwiches.
