Today, our oldest is officially starting school – virtual charter school, it’s a cross between home schooling and public. This means it’s time to get back on track and make sure dinner isn’t another hassle.

  • I love the idea of C.O.R.N. What a great way of identifying “leftovers” night. Sounds much better that way!

  • Monday (tonight) my husband is making burgers on the grill, with baked beans and honeydew melon on the side.

    Tuesday: Roasted chicken, roasted carrots, stuffing

    Wednesday: Italian sausage with pasta & tomato sauce, salad.

    Thursday: Ribeye steak, steamed corn on the cob, steamed broccoli

    Friday: Shepherd’s pie

    Saturday: Out to dinner with a friend for me, leftovers or frozen dinner for husband.

    (Our C.O.R.N. – love that acronym – is what we take to work for lunches.)
