    Menu Monday 8/17

    Heather says:

    Today, our oldest is officially starting school – virtual charter school, it’s a cross between home schooling and public. This means it’s time to get back on track and make sure dinner isn’t another hassle.

    • Monday – Black bean burritos, fried green corn, guacamole* & tortilla chips
    • Tuesday – Pulled pork sandwiches, carrot raisin salad, Boston baked beans*
    • Wednesday- C.O.R.N.**
    • Thursday – Wine braised chuck roast* (in the crock pot, it’s too hot for the oven), carrots, wilted spinach
    • Friday – Fish and chips, steamed broccoli
    • Saturday – Homemade pizza night, raw vegetables, ranch dressing for dipping (pizza sauce recipe, pizza dough recipe)
    • Sunday – BBQ chicken, macaroni and cheese, green beans, salad

    * indicates a recipe I will try to add to our collection
    ** Clean Out Refrigerator Night

    I love the idea of C.O.R.N. What a great way of identifying “leftovers” night. Sounds much better that way!

    Monday (tonight) my husband is making burgers on the grill, with baked beans and honeydew melon on the side.

    Tuesday: Roasted chicken, roasted carrots, stuffing

    Wednesday: Italian sausage with pasta & tomato sauce, salad.

    Thursday: Ribeye steak, steamed corn on the cob, steamed broccoli

    Friday: Shepherd’s pie

    Saturday: Out to dinner with a friend for me, leftovers or frozen dinner for husband.

    (Our C.O.R.N. – love that acronym – is what we take to work for lunches.)

    What a great blog! You offer simplicity for the average family to plan a weeks worth of menu ideas along with a simple click on receipes and grocery lists!!!
