Well, I put some chicken in the crock pot, sauted some ground turkey and a little beef with garlic and onions, cooked a nice big pot of frozen lima beans, cooked some yams, (we already had brown rice) and made some fresh broochli.

I like to cook enough to last at least 3 days and with the variety of meets and veggies, the meals don't get boring.

Be well ...

P.S. I love soup and can eat it everday!

Its annoying when people snub soup in summer! I mean, yeah...don't bring hot soup to an outdoor picnic or if your AC us out but most food is warm anyways.
Its healthy and easy. I made it last weekend for lunch!

We are also having stuffed peppers tonight! How ironic. I was thrilled when Sam's had a six pack bag of all red peppers, too! Its not common. I don't mind yellow and orange, though.

I'm going to make a classic meatloaf type mix, using Sweet Baby Rays BBQ sauce instead of my usual catsup, with saltines and milk. (and some meatballs for the freezer, for next week.)

We are doing the salad buffet type thing this week. I call them executive chef salads. It really is just bags of chopped/sliced/prepped veggies, meats (I bought 1/2 in slices of brown sugar ham, pastrami, and roast beef, at the deli counter and cubed them at home), cheeses (mozzarella, jack, and cheddar), fruits.

Everyone has their "must haves" for salad. Mine happen to be cottage cheese, pickled beets, toasted pine nuts or slivered almonds, dry chinese style rice noodles, and sometimes boiled egg or egg salad.

I put my chopped turkey mix (I bought a 1/2 inch slice of three types of turkey breast.. peppered, oil browned and sun dried tomato) into my magic bullet with cream cheese, mayo, pickle, and cucumber today. Instant no gunk filler potted meat! I don't know why I don't remember I have that little gadget, more often.

We had potato soup last week and we're having peanut soup this week. Odd, for sure, but I'm okay with that :)
