    Menu Monday 7/23

    It’s still Monday! Doctor’s appointments and last minute baby type errands kept me away from the computer most of the day.  Thankfully my mom and stepfather brought over a ton of food on Saturday for my birthday.  He fixed a Lowcountry feast: frogmore stew, cucumber and tomato salad, crab legs, hot buttered French bread and of course, we cannot forget the pièce de résistance chocolate cake!

    Apparently they thought an army was coming for dinner, so we are positively swimming in leftovers and much of this week will reflect that.

    • Monday – spaghetti marinara with shrimp
    • Tuesday – kielbasa, sauteed potatoes and onions, corn on the cob, and cucumber salad
    • Wednesday – crab salad, assorted raw veggies
    • Thursday – C.O.R.N.*  to take care of the various remnants
    • Friday – Tim and I may actually go on a date**
    • Saturday – grilled steaks, sweet potatoes, grilled veggies
    • Sunday – roast chicken, rice, gravy, green beans

    *Clean Out Refrigerator Night

    ** Watch for falling temperatures.

    I am soooo envious of you! Frogmore stew!!!! I lived in Beaufort once upon a many moons ago, and I remember having that, but I do not know how it was made. It was soooo good. I would absolutely love you if you would post a recipe(more like outline) for it sometime.
