Menu Monday 6/25

Heather says:

I am under strict orders to rest.  For the next several weeks my husband will be doing the shopping, so the menus may seem simplified, skimpy, or even repetitive.  I plan on using this as an opportunity to improve my 12 year old stepdaughter’s basic cooking skills.  I will not turn her into Cinderella, but there are times when we all have to pitch in, it’s part of being a family.  Health and budgetwise we just cannot afford frequent take-out.

  • Monday – Black bean taco salad
  • Tuesday – Spaghetti w/ zucchini and summer squash in basic marinara
  • Wednesday – No cooking, we have been invited to a pot-luck.
  • Thursday – chicken ka-bobs, grilled corn, confetti rice
  • Friday – tuna melts, raw vegetables & dip
  • Saturday – chili-macaroni, tossed salad
  • Sunday – roast beef, roast potatoes, cucumber salad, green beans

I like the black bean taco salad recipe. It sounds so yummy. And, big plus-- black beans are so good for you. (Not that healthy is my main focus when eating a taco salad:)

The tuna melts also sound great; I haven't had one in years.
