Menu Monday 6/14/10

It’s a little early in the year for triple digits, but here we are. I -and our electric bill- hope it’s an aberration and that we’ll drop ten degrees for at least a few more weeks. This week it’s early morning play, long naps, and late evenings. It’s not so bad once the sun drops behind the trees, until then it’s time to lay low.  The naps are for the kids, if you need me, I’m holed up in my closet / office working on that deadline.

Bolded items are those I hope to get photographed and uploaded into the recipe index, but life has been having its way with me, lately.

  • Monday – Grilled Pita Pizzas, Greek salad
  • Tuesday – Southwestern Cheeseburgers (thanks JanetLee for the idea), pasta salad, some manner of grilled vegetable
  • Wednesday – Tomato pie (I’ll make it first thing in the morning), Chopped salad
  • Thursday – Beef burritos (crock pot on the back porch with round steak and salsa), guacamole, tossed salad
  • Friday – Grilled chicken over large salads
  • Saturday – Pizza night, I just might cave and order this week. We’ll be at the wedding of some wonderful friends (in a planetarium, how cool is that?)
  • Sunday – C.O.R.N.*

    We haven't even hit an 80 degree day in my neck of the woods! Still mostly in the 50's & 60s and if we get lucky we go into the 70's! There was SNOW last week. I'll send you a box of snow if you send me some of your sunshine!

    On menu this week:

    Mon: Chicken Burritos (Hubs' new obsession)

    Tues: Spaghetti & Meatballs, Cesar Salad, Garlic Cheese bread

    Wed: Grilled Curry Chicken with Peanut Sauce, Couscous, grilled veggies

    Thurs: Grilled Burgers and Corn, Garden Salad

    Fri: Chili and Yankee Cornbread, Garden Salad

    Sat: ?

    Sun: ?

    I love that you plan out your menu for the week. I do too and all my friends make fun of me. But hey, I am eating better than they are. On my menu tonight… slow cooker chicken. Anything to keep from turning on the oven in this heat.

    Going out to dinner tonight. Tomorrow, Lentil and Vegetable Soup. Other than that I'm not really sure. I have yogurt I need to use up so I may try Laurie Colwin's Fake Tandoori Chicken (you mix yogurt, garlic, paprika and chili powder into a paste, paint it on the chicken and refrigerate a few hours, then bake or grill). Also I have meatloaf in the freezer and I may fix that.

    LIke Jenn, we have another month or two until the tomatoes are ready. But tomato pie sounds like it's the answer to my prayers today. Instead, I'm making roasted chicken enchilada casserole. I think our meal plan will be heavy on the 'forage and find', because I have quite a baking to do list this week: two batches of soft chocolate chip cookies to mail out for Father's Day, carrot cake birthday cupcakes, and a German Chocolate Cake for my husband for Father's Day.

    Ohhh! Tomato pie! That sounds so good, but we are at the very least a month away from getting Tomatoes from the garden here, and I can't stand the thought of buying lackluster grocery store ones when I know I have garden fresh ones on the way *fairly* soon.
