    Menu Monday 5/21

    Heather says:

    After working through the weekend, my husband’s job should return to normal. I have the utmost respect for military wives and single moms. It is lonely being the only one in charge from wake-up until long past bedtime. This week things will slowly return to normal, with the bonus treat of a holiday weekend.

    • Monday – eggplant parmagiana, pasta with basic marinara*, salad
    • Tuesday – steak fajitas and refried beans
    • Wednesday – sloppy joes, corn on the cob, ranch potato wedges, and salad
    • Thursday – chicken pilau*, corn muffins, butter beans
    • Friday – garlic and dill salmon, confetti rice, broccoli, and dill cucumber salad
    • Saturday – calzones*, salad
    • Sunday – pot roast, carrots & celery, rice & gravy

    *With the arrival of the new baby looming closer each week, I am beginning to plan my post baby meals. Each week I’ll cook at least one double batch and prepare and freeze half for the future. My goal is to stockpile enough to lighten the burden for nearly six weeks.

    Oh, I didn’t mean to imply the baby would be arriving that soon. My due date is Aug 15, but if it follows in my first two’s footsteps, I’m guessing around Aug 1.

    Congrats on impending baby-ness! I did the same thing- made double and froze things. I did have a couple of days that I cooked several things as well. It was such a help!

    I’m glad things are getting back to normal with your DH. Mine just got back from a 2-week trip (we’re Air Force) and it was exhausting!

    Anyway, have a wonderful week!! :)
