    Menu Monday 5/12

    It’s Monday again.  I’m not quite sure how this keep happenings, but here we go again.  More recipes will be linked throughout the week.

    Are you trying any new recipes this week?

    • Monday – Lentil casserole, roasted potatoes, broccoli
    • Tuesday – Beef fajitas, Spanish rice
    • Wednesday – Chicken noodle soup, tossed salad
    • Thursday – C.O.R.N.*
    • Friday – Grilled tilapia with aioli, pilaf, grilled Brussels sprouts
    • Saturday – Pizza night
    • Sunday – Roast beef, parslied potatoes, wilted spinach with garlic

    *Clean Out Refrigerator Night

    mmmm…grilled brussels sprouts? That sounds DELICIOUS! Do you do them in a basket?

    I do it the same way I do the asparagus. Drizzle with olive oil, a little kosher salt, and finish with some cracked black pepper.

    I’ve even done it with frozen sprouts with good results. Fresh is best, but I use what I have.

    Just wondering how long your family will let you get by with soup for supper. I can only pull it off when the weather is frightfully cold, otherwise my husband thinks it’s a sissy’s supper. You are blessed to still be doing soup in May!
