Here we go, that first stretch of non-holiday living. Ready or not, it’s back to the grind. This week is an attempt to only hit the produce & dairy section. We didn’t eat at home as much as I had planned last week* and now we have leftovers that must be used quickly. We are also trying to get back into the habit of having a salad with nearly every meal.

|Tuesday||Spaghetti with meatballs, tossed salad|
|Thursday||Beef and vegetable fajitas, refried beans|
|Friday||Seared scallops over rice pilaf, steamed broccoli, tossed salad|
|Saturday||Breakfast for dinner: pancakes, eggs, bacon, fruit|
|Sunday||Herb roasted chicken with raspberry sauce, green beans, parslied potatoes, salad|

** The bulk of this week’s mustgo soup is from chicken, rice, and black beans. As it already has a southwestern feel to it, I’ll add chicken broth, cilantro, and perhaps corn or tomatoes. I love this technique for using up lots of leftovers.
