Menu Monday 1/7

Here we go, that first stretch of non-holiday living.  Ready or not, it’s back to the grind.  This week is an attempt to only hit the produce & dairy section.  We didn’t eat at home as much as I had planned last week*  and now we have leftovers that must be used quickly.  We are also trying to get back into the habit of having a salad with nearly every meal.

Monday Mustgo soup**, homemade rolls
Tuesday Spaghetti with meatballs, tossed salad
Wednesday C.O.R.N.***
Thursday Beef and vegetable fajitas,  refried beans
Friday Seared scallops over rice pilaf, steamed broccoli, tossed salad
Saturday Breakfast for dinner: pancakes, eggs, bacon, fruit
Sunday Herb roasted chicken with raspberry sauce, green beans, parslied potatoes, salad

* Thanks for dinner, Mom

** The bulk of this week’s mustgo soup is from chicken, rice, and black beans.  As it already has a southwestern feel to it, I’ll add chicken broth, cilantro, and perhaps corn or tomatoes.  I love this technique for using up lots of leftovers.

    Fabulous ideas. I love pancakes. It’s been ages since we’ve fajita’d and you must share on how you cook your scallops. I order but I’ve never tried to make- totally intimidated.
