    Menu Monday 10/8

    Heather says:

    I am still waiting on the apples my produce guy promised to arrive. Hopefully this week, while I’m still in the mood to bake.

    Lunch

    1. PB&J, yogurt, fruit
    2. Stuffed baked potatoes
    3. chef salad
    4. Egg salad sandwiches,  raw  vegetables
    5. Chili mac, salad
    6. Tuna melts, chips, soup
    7. Leftovers

    Dinner

    • Monday – Tomato pie, caesar salad
    • Tuesday – chicken marsala, pasta, steamed vegetables
    • Wednesday – Mustgo soup, sandwiches
    • Thursday – beef stroganoff, steamed broccoli
    • Friday – crab cakes, cheese grits, salad
    • Saturday – oven fried chicken fingers, ranch potatoes, raw veggies and dip
    • Sunday – beef roast, creamy horseradish, mashed potatoes, roast vegetables – turnips, carrots, parsnips

    Everything looks great. I love how you include lunch and dinner menus – I should add lunch as well.

    I liked the Must Go soup. I used to keep a large mix-n-store Tupperware container in the freezer above my fridge, and any leftover vegetables or starch (rice, potatoes, noodles) would go in there. When the container was full, I’d add a broth and some meat and make soup. Great menu plan!

    Your menu looks great and that mustgo soup looked pretty yummy too. Might have to try that one.
