    Menu Monday 10/27

    Last week turned into a series of days where I just got off track, so some items are quickly moving into use it or lose it territory. Tell me, Home Eccers, what’s on the menu at your place? Feel free to leave your link below.

    • Monday – Garlic and soy chicken thighs, zucchini and mushrooms, baked potatoes
    • Tuesday – Chili, cornbread (Yes, it’s going to be sweet, don’t be a hater)
    • Wednesday – C.O.R.N.
    • Thursday – Raspberry pork chops, steamed broccoli, rice
    • Friday – Dilled salmon, roasted potatoes, squash casserole
    • Saturday – Chili dogs (beef), stove top mac and cheese, green beans
    • Sunday – Lasagna, Caesar salad.

    Since I do Once A Month Cooking, my meals are totally ready in the freezer. We are having:

    Monday: Chicken Pot Pie
    Tuesday: Chili (from the Crock Pot)
    Wednesday: Church Dinner (no cooking!)
    Thursday: Chicken Stir-Fry
    Friday: BBQ (Pulled Pork) Cups
    Saturday: Dinner Party at our house- Dinner in a Pumpkin
    Sunday: Chicken Tostadas

    Yea! The only one I have to prepare is the chili, and it will cook in the crock pot while I’m at work!

    I LOVE sweet cornbread! It’s the only kind I’ll eat. My southern-born mother won’t stand for it!

    The great cornbread debate mystifies me almost as much as the BBQ wars of the South. I love all BBQ well, except maybe the mayonnaise kind, but I hate mayonnaise so that doesn’t mean it isn’t good to some people. Crazy people, but I’m sure they are quite nice. ;)

    I make plain cornbread when I give meals around here because I think it just might be a sin to publicly admit liking the sweet variety.

    We are big fans of Jiffy Cornbread! I enjoy putting a cup of frozen corn in the mix before putting in the oven. The cornbread comes out more moist and a little more cornier! Haha, sorry! That was a bad joke! :o )

    We are kindred spirits! I LOVE, LOVE, LOVE sweet cornbread. Especially with Chili. MMMMMM

    So. Can you handle couple more for supper tonight? haa ha
