    Menu Monday 10/1

    Heather says:

    Fall is here.  The windows are open and it feels safe to bake once again.  If time permits (when does it, lately?) I will be making bagels and cinnamon bread.

    Lunch:

    • Egg salad sandwiches, carrots & celery sticks
    • Spaghetti with marinara
    • Corn chowder, BLTs
    • PB&J, raw broccoli
    • Turkey wraps, yogurt, chips
    • Chef salads + soup
    • leftovers

    Dinner:

    • Monday – Jap Chae, miso soup (yes, I mixed ethnicities)
    • Tuesday – tortilla*, salad
    • Wednesday – C.O.R.N.**
    • Thursday – Pork chops with raspberry sauce, rice, steamed vegetables
    • Friday – Catfish, roast potatoes, coleslaw, green beans
    • Saturday – Beef stroganoff, steamed broccoli, corn or carrots
    • Sunday – Chicken pilau, corn bread, salad

    *Tortilla -A Spanish omelette with potato.  My mother has chickens and we are taking full advantage of what they have to offer.

    **Clean Out Refrigerator Night

    You’re *making* bagels? Please, when you do, post the recipe. We eat them like crazy in my house and I’d love to make some one cool weekend morning.

    If you want to stick with Korean, you could substitute a mandu (dumpling soup) – here’s one recipe – http://www.cookbookwiki.com/Mandoo_guk_(Korean_dumpling_soup). If you look for more recipes, some sites will spell it mandu, mandoo, etc.

    PS – My parentheses ended up in the wrong place. Mandu is dumpling, not specifically dumpling soup.

    I’ve eyed bagel recipes before, but haven’t actually made them. So, I third the motion, please share your experience/recipe!
    Also, Rachel, I checked out the Korean dumpling soup – it sounds delicious, but looks like a lot of work. In your experience, is it?

    Margo, if you have dumplings already made it wouldn’t be so bad. If not, well, you have to make dumplings.
