I so admire you for being able to do the meal planning thing. I do try and usually stick to it rather well but nothing is ever written in stone. I'm ashamed to admit I still occasionally have leftovers to throw out. I need to plan better, right? Thanks for sharing!

I've never mastered the art of menu planning for a week (8 year old who eats like a horse one day and like a saprrow the next!), but what I am doing is going through my fridge on a Monday and planning a few meals around the things that need using quickly before they go off. This helps to reduce our food waste.

This week that includes chicken with leftover roast potatoes and vegetables
Smoothies made from 1/2 pineapple and 1/2 tin fruit
And shepherds pie made from some leftover minced beef.

The lentil casserole recipe sounds lovely; I love the idea of mixing lentils with oats; it's going to be really filling with minimal cost. I'll be trying that one this week.

Thanks for the inspiration!
