Cookie-a-day: Candy Cane Cookies Recipe

Actually, I had planned on doing cookie-a-day today, it’s just that I ran out of time to actually bake them before I had to leave to go to the church Christmas dinner. Such is life! Here’s the recipe:

Ingredients:

1/2 C butter or margarine, softened

1/2 C shortening

1 C confectioner’s sugar

1 egg

1 1/2 tsp almond extract

1 tsp vanilla

1 1/2 tsp peppermint extract

2 1/2 C flour

1 tsp salt

1/2 tsp red food coloring

Preheat oven to 375.

Directions:

Mix butter, shortening, confectioner’s sugar, egg, and flavorings. Slowly blend in flour and salt. Divide dough in half, blend food coloring into one half. Shape 1small scoop or 1 tsp dough from each half into 4 inch rope. To make the ropes smooth and even, roll back and forth on floured board. Place ropes side by side, press together lightly and twist. Complete cookies one at a time. Place on an ungreased baking sheet. Curve top down to form handle of cane.

Bake for 9 minutes or until set and very light brown.

I made these two christmas's ago (worked overseas last year) and I used ground up candy canes. My recipie is a ltitle different, but i couldn't tell you how except i don't use almond extract. If I remember correctly I used vanilla extract in lieu of peppermint, and then added the candy canes.

I just checked Allrecipes. They have three recipes and one of them uses half icing sugar half regular sugar. That might be better. Or all regular sugar.

As I said, they are really adorable looking and if I liked the taste I'd make them again. I even coloured some of the dough green so I could make green and white canes too. Then I ran out of white dough so I made some green and red canes. I considered putting only peppermint extract in the white dough and only almond extract in the coloured dough, but in the end I didn't do that (probably wouldn't have been noticeable anyway).

That very well could be it. I wonder if switching out the confectioner's sugar for white sugar might make the cookies more to your liking. I dunno. If I get time I might play with the recipe.

Oh, also I found them quite salty. Perhaps half as much salt would be sufficient.

No, it wasn't the degree of mintiness. It was more the cookie in itself. The closest word that I can think of is "dusty". I don't think I've ever baked with icing sugar (I call it icing sugar, I think this may be a Canadian/British term) as an ingredient though, so I wonder if the icing sugar is to blame. I understand that icing sugar contains some cornstarch as an anti-caking agent.

Anyway, not your fault! I hope I have better luck with the next cookie recipe I try (I'm making jam thumbprint cookies on Thursday).

That's strange, everyone in my family loved them. Do you think they're too minty? Not minty enough?

I tried this recipe the other day. They look cute and all, but they really don't taste very good. Nobody in my family liked them. I got about 2 dozen out of this recipe, and now I don't know what to do with them. I am pretty sure I followed the recipe exactly, no missing ingredients or change of quantities.

These cookies bring back really fun memories from childhood. I thought that it was magical to see 2-colored cookies in the shape of a candy cane. I'll have to repeat the tradition with my kids, now that I have a recipe. Thanks!

um, I'm just hoping to turn out one batch of sugar cookies that my toddler can enjoy cutting out and nope, we haven't gotten to it yet. sighhhh. Christmas.
