    Cookie-a-day: 3 ingredient peanut butter cookies

    These cookies aren’t quite as tasty as Heather’s peanut butter cookies, but if you are  in a major hurry, or are craving cookies and are out of most ingredients, or feel like eating some cookies but don’t want the fuss of making something that takes a long time, these are your best bet.  A commenter on Heather’s peanut butter cookies has posted nearly the same recipe as mine, but mine’s even simpler.

    Ingredients:

    1 cup peanut butter

    1 cup sugar

    1 egg

    Directions:

    Preheat oven to 350 degrees.  In a medium bowl, mix all ingredients thoroughly. Using a medium scoop or tablespoon, drop onto greased cookie sheet or cookie sheet with parchment paper (my preference, although cutting the parchment paper does slow you down quite a bit), press with fork to make cross hatch design. Bake for 10-14 minutes. Cookies will look slightly undone and won’t puff up. Remove cookies to wire rack immediately to cool. When using the medium scoop, this will make about 15 cookies.

    And they are gluten free! My nephew, whom has Celiac Disease, makes these all of the time. :)
