It’s a shop from the fridge and pantry kind of week. I have a bunch of potatoes that need to be used up. I’ll round everything out with fresh produce.

Yesterday’s turkey dinner has given us some leftovers to enjoy for the next two days. There was hardly any turkey left (from the two we made), so we’ll just have sandwiches rather than trying to do anything special with the meat. I’ll use one of the skeletons to make stock which I’ll freeze for soup at a later date.

  • Monday – C.O.R.N.
  • Tuesday – C.O.R.N
  • Wednesday – Grilled sirloin steaks over some kind of Southwestern style salad (Obviously I’ve put a ton of thought into this one)
  • Thursday – I’m going to try Sue’s No Tomato Chili, cornbread (with corn), again with the salad
  • Friday – Shrimp and grits, steamed green beans
  • Saturday – Pizza Night
  • Sunday –  Is going to be a lazy day, if I have to tie everyone to the couch. We’ll graze for dinner, mooch something (hi mom!), or Mr. Heather can cook. I’m taking that day off.

Menu Monday 10/26

Somehow through the busyness that was last week, my fridge is filled to capacity. This is a good problem to have, as it will let me skate through the next few nights recreating the leftovers when I need to.

  • Monday – A variation on beef burgundy over mashed potatoes, peas with almonds, carrots*
  • Tuesday – L/O chicken bog will be converted to chicken & rice soup
  • Wednesday – C.O.R.N.**
  • Thursday – C.O.R.N.
  • Friday – Salmon with lemon & rosemary, risotto, stir-fried green beans
  • Saturday – Soup and sandwiches before Trick-or-Treating
  • Sunday – Early Thanksgiving (I’m using this to take photographs for many of the recipes I’ll be sharing in the series Countdown to Turkey Day)

*I didn’t make Sunday’s dinner, so everything is on hand and needs to be used
**C.O.R.N. is Clean Out Refrigerator Night

Menu Monday 10/19

This week is going to be more than a little crazy. Not only are there meetings & events almost every day, but my husband starts outage. What does that mean? Well, typically he works 12 hour shifts that keep him away from home about 14 hours a day. Outage just means things get worse. Am I grateful he has a job? Absolutely, but we all complain about our own situations from time to time, right?

Oh, that’s right, I’m the only whiner. Sometimes I forget.

So, onto the menu:

  • Monday – Spaghetti with meatballs (I’m linking to my usual recipe, but I totally cheated today)
  • Tuesday – Bean burritos, Spanish rice, corn
  • Wednesday – Chicken bog, green beans, cornbread
  • Thursday  - C.O.R.N.*
  • Friday – Date Night Dinner: Adults: Mussels in broth, blackened tuna, acorn squash, rice pilaf
    Kids: same sides + fish sticks (they’ll eat slightly earlier, too)
  • Saturday- Pizza Night – I’m cheating this week, for the sitter’s sake
  • Sunday – A variation on beef burgundy over mashed potatoes, peas with almonds, carrots

Menu Monday 10/12 -The Unplan

We’ve lived here for six years and my in-laws visit at least twice a year. This week, my brother-in-law and his family will also be joining in on the fun. I’ve learned that when my relatives are in town, I can just forget about having a menu plan. I’ve learned it’s better to just have a vague idea of what I can prepare than an actual plan. Seeing family is well worth that inconvenience and sometimes we just have to learn to go along to get along.

What do you do when company arrives?

Items I will suggest as possibilities, there will be six adults and five children:

  • Lowcountry Boil (aka Frogmore or Beaufort stew) it’s a boiled dinner of sausage, onion, corn on the cob, potatoes, and shrimp.
  • Spaghetti
  • Chimichangas
  • Pulled Pork

None of these are too labor intensive and two utilize the crock pot. The obstacle, in my opinion, is having the right amount of meat thawed at the right time.
