    Simple Chicken Curry

    This may not be the most traditional curry recipe available on the ‘net, but the kids love this mild version. My husband and I find it a pleasant change from our usual repertoire. It is also easily adapted to a kosher diet by substituting cultured soy for the sour cream. However, I have not personally tested that version.

    Simple Curried Chicken with Broccoli

    • 1 cup chicken stock or broth
    • 1/2 cup sour cream
    • 2 tsp curry powder
    • 2 tsp cornstarch
    • 1 TBSP olive oil
    • 1 – 1.5lbs boneless skinless chicken
    • 1 large bunch broccoli cut into florets and steamed
    • pepper to taste

    In a small bowl whisk together broth, sour cream, curry powder, cornstarch and ground pepper.

    Pound chicken to tenderize, then slice into thin strips.

    Heat the olive oil in a large skillet over med-high heat. Sauté chicken until done, draining any liquid, if necessary. Reduce the heat to medium and and stir in the steamed broccoli, gently stir in the sauce and bring to a boil. Reduce the heat to low and simmer five minutes. Serve over rice.

    I often double the sauce portion.

    This would be good with coconut milk too, also a kosher alternative I think.

    i’ve done it with soy milk for a thinner sauce and it’s not bad.
